Abstract:

The article proposes the results of studies of the boiling processes of emulsions and the effect on these processes of additional added energy, for example, acoustic energy. The possibility of the existence of a resonance of oscillations of the volume of vapor bubbles is shown. In such conditions, bubbles can break up or explode. The effect of surfactants on the intensity of these processes is illustrated.
Application of the obtained results will make it possible to determine conditions of the energy effect on the emulsion structure for its breaking-up (homogenization).
